Equipment

  • knife, cutting board, food processor or trusty blender

Ingredients

  • 8 oz Coconut Milk, canned (1/2 a can, the thickest part)
  • 1 Serrano Pepper, seeded Optional – use 1/2 tbsp of Trader Joe's South African Smoked Pepper Grinder instead
  • bunch cilantro (1/2 cup packed with stems)
  • 1 Lime Juiced
  • 1 tsp Minced Garlic
  • ½ tbsp Extra Virgin Olive Oil

Instructions

  • Wash and trim the ends of the stems off the cilantro, break it into 2-4" pieces and add it to the food processor. Wash and de-seed the pepper, removing the top.
    Add this to the food processor along with remaining ingredients. Blend until smooth.
