Vegan Paleo Meatballs Exist!

I created these as a means to finish a vegan version of our “Detailed Paleo Week” budget-savvy weekly menu.

Turns out they’re yummy keepers for an A-grade steal!

I highly recommend pairing them with the (meatless) Nomato sauce from “Spaghetti and Meatballs” by Mickey Trescott.

Alternatively, serve them in a GameDay crock-pot appetizer or double them up and mash them into paleo vegan slider patties!

Equipment

  • food processor or trusty blender, skillet, measuring cups and spoons, oven, baking sheet, non-stick baking mat or parchment paper

Ingredients

  • ½ cup Walnuts shelled
  • 3 tbsp Nutritional Yeast
  • 4.5 tbsp Avocado Oil
  • 3 tbsp Organic Hemp Protein Powder unsweetened
  • ¼ cup Onion chopped
  • 3 tbsp Bragg's Apple Cider Vinegar
  • 3 tbsp Coconut Aminos (we like Bragg's)
  • ¾ tsp Crushed Rosemary
  • ¾ tsp Oregano dried
  • 2 tbsp Almond Flour
  • 3 tbsp Organic Flaxseed, Ground

Instructions

  • Preheat the oven to regular bake 350°F.
  • Line a baking sheet with parchment paper or a non-stick baking mat (my favorite).
  • Add all of your ingredients to the food processor and blend until you have a fairly even consistency. If you prefer a bit of texture, then add your nuts first, blend for a few seconds, then add the rest of your ingredients (to avoid major nut chunks).
  • Create 1" balls with clean hands or an ice-cream scoop, and place on the tray to bake.
    Bake for about 25-30 minutes or until crispy and they begin to brown.
