A Detailed Week to Cut Your Cook Time!

We did all the work for you: here’s a meal plan with cooking schedule and costs!

The “HOW TO” part of meal planning, budgeting and mouth feeding without spending all week in the kitchen.

I created this week menu and game-plan as a snap-shot example of how to incorporate a range of budgets into a single week (from A-grade to C-grade meals) and still come out at UNDER $250 per person for a monthly grocery estimate… while fulfilling Calorie and nutrient needs.

Research supports eating a vegan or pesca-vegan diet to promote a more healthful longevity, so I’ve also included a vegan rendition for this week. The vegan and non-vegan meals are all included in this single file. In other words – each recipe is either inherently vegan or easily made into vegan meal.

Savory Bell Peppers

One of my favorite ways to budget and plan new recipes is by re-purposing old ones! This recipe does just that. With gusto.

I utilized my black bean burger recipe and added a twist to create an easy meal for stuffed bell peppers on a budget. The most expensive part will be the bell peppers. The stuffing earns an A grade in cost per kcal.
